With a very high vanillin content, frosted Bourbon vanilla is renowned for its captivating aroma and delicate flavor. It results from a complex process requiring optimal ripeness at harvest, careful preparation, and proper storage. During the refining process, excess vanillin crystallizes on the bean, forming small vanillin crystals. It is used just like traditional vanilla beans but offers amore intense aroma to elevate your culinary creations. This vanilla, grown in the Indian Ocean region, is best preserved in a glass tube, stored in a dry place, away from light and air, to maintain its subtle flavor.

Bourbon vanilla caviar gets its namefrom its appearance : small, moist black seeds extracted directly from gourmetvanilla beans. It can be used in both sweet dishes (yogurt, crème brûlée, flan,rice pudding) and savory dishes (meat, vegetables, foie gras).
To produce this premium-quality vanilla, we carefully extract the seeds using the tip of a knife. It takes 6 to8 kg of gourmet beans to obtain 1 kg of pure caviar, which explains its higherprice. The emptied pods are then recycled into vanilla cuts for extraction andvanilla powder production.

Also known as banana vanilla, Pompona vanilla is a rare and precious variety mainly cultivated in CentralAmerica and the Caribbean. Believed to be a hybrid of Tahitensis vanilla and Planifolia vanilla, it stands out for its impressive size, reaching up to 27 cm in length.
Its generous size is matched by its intense and sweet aroma, highly prized by top chefs. With its thick and fleshy pods, Pompona vanilla is an exceptional-quality product.
